Dinner Conversation

And so it's the end of a long day... Work. School-run. Quick dash to the shops (because we're out of kitty food, and hell hath no fury like a hungry cat!). Am I the only crazy one that looks to the kitchen to relax and recharge?
I find nothing more soothing than sauteeing up onion, dicing carrots and liberally seasoning a bubbling pot of yum! Michelle thinks I'm quite mad for loving cooking so much... but I can't think of anything nicer to dissovle a day full of crazy! And although I like nothing better than to poooour over a pile of cookbooks or foodie magazines for delectable recipes to try, I actually quite enjoy 'making it up' as I go along! If you have a basic grasp of what ingredients go together, and a fridge and pantry full of good staples (pasta, rice, grains, fruit, veg, tinned tomatoes... EVERYONE must have tinned tomatoes in their cupboard. I always buy in bulk!), you can create a myriad of different dishes!
For example, last night it looked like a Tuna Mornay was on the menu. Okay in it's own way... but I was pretty sure I could do better. And so, after a forage in the cupboard, I found a hoard of potatoes. So I hit on the idea of doing a Tuna Shepherds Pie. So into the white sauce when peas, diced carrot, diced tomato and a good pinch of dill. Mashed spud on top with a generous sprinkle of grated cheddar. Fabulous and gave us lunch the next day as well! >
Tonight I'm planning on roasting up some beetroot, carrots, sweet potato and possibly some zucchini (just to tick that 'green' box!) for 30 minutes. Mix it all together with a balsamic dressing along with some creamy fetta and pepitas. A non-boring salad which requires little effort.
You see? It doesn't take much to cobble together a quick, healthy dinner. Really, there is little excuse to grab takeaway.

    Thanks for your comment on mine. BTW, would you like a similar quilt in blacks with a little brights? I have half a one done, would be smaller than above tho.

      I've heard a lot about you too! ;)
      The quilt is just amazing! My mum quilts too, but doesn't get a lot of time to finish projects unfortunately. I'll definitely have to show her yours!
      A similar quote would be awesome! :O But of course would want to offer you some form of payment... let us know how much!! :)
